A new chapter for Le Pérolles: Pierrot Ayer passes the torch
After more than forty years at the forefront of Fribourg’s gastronomy, Pierrot Ayer will step away from the stoves in early 2026. His son Julien Ayer and Chef Victor Moriez will then take over the reins of Le Pérolles, carrying this family story forward.
A Legacy of Excellence
Since opening the first Pérolles in 2002, Pierrot Ayer has shaped the Swiss culinary scene with his deep connection to Fribourg’s terroir, his precision, and his creativity. Holder of a Michelin star for 26 consecutive years, he has trained a generation of chefs and delighted guests with seasonal, product-driven cuisine.
A Smooth Transition
On February 4, 2026, Julien Ayer, passionate director and sommelier, together with Victor Moriez, a young and talented chef trained in some of Switzerland’s finest kitchens, will officially take over. The four months leading up to this date will be dedicated to a thorough handover in both kitchen and dining room, ensuring continuity of excellence with the current team remaining in place while opening the door to a confidently modern vision.
A Tribute Menu to Mark the Moment
To thank his loyal guests and celebrate his career, Pierrot Ayer will present a Tribute Menu to Pierrot & Françoise Ayer from November 19, 2025 to January 31, 2026. Inspired by his signature dishes, this unique menu offers a final chance to savour the flavours that defined Le Pérolles before the next chapter begins.
